The particle size reaches 1.5 millimeters, but they are generally smaller, approximately 0.5-0.7 millimeters.

Of course, the differences between such flour and other members of the family are obvious. Fine wheat flour, for example, is ground several times and sifted to separate particles of different sizes. And this flour, used by housewives for baking, looks like white purified powder. But another flour - coarse flour, which is also quite actively used in cooking, is often confused with single grinding (whole grain).

A little history

In ancient times, people, having learned to grow cereals and use their grains for food, produced just such whole grain flour for food. This was done using various devices based on the effect of friction: mortars and grain grinders of various calibers. The resulting product was immediately used for food without sifting: they cooked porridge, baked bread from it, without using any additives. Probably, every people who were engaged in agriculture in ancient times had their own recipes and devices, called differently. But the essence remained the same: to obtain coarsely ground grain and use it for food, boiled or baked.

In Russia

It is interesting that in Russia, some mills used coarse grinding of grains right up to the 19th century, without further sifting. And the division of flour into varieties was already carried out in bakeries and bakeries. However, mills usually still selected the bran (the outer covering of grains), and coarse grinding was considered "poor man's flour." So, if you don’t have the money to purchase an electric mill, don’t rush to get upset. A special attachment for a mixer or blender already on the farm will help. By the way, if the blender is really powerful, then it can quite professionally grind all grains and legumes, as well as nuts, into single-grind flour. In the end, a regular coffee grinder will do (just charge a little at a time, in small portions) or an electric food processor. Well, for those who like “sunset by hand,” there are mortars, millstones, and hand coffee grinders. Here, with appropriate efforts, you can feel yourself in the role of an ancient farmer.

  1. Bread. This is the first thing that comes to mind when you want to make baked goods with whole grain flour. We will need (for 2 loaves): a glass of warm purified water, a packet of quick yeast, a glass of milk, a third of a glass of honey, a little vegetable oil, a little less than a kilo of whole grain flour, a spoonful of salt. Mix yeast with warm water. When they become active, add honey, milk, and butter. Add flour, stirring, salt. Knead the dough first with a mixer (to break up lumps), then with your hands. When it stops sticking to your hands, it’s ready. Let the dough rise in the bowl for an hour and a half (it will approximately double in size). Bake in the traditional way in the oven or bread maker. Whole grain rye flour can also be used to make bread. It contains even more useful substances.
  2. Porridge. You can make a tasty and healthy porridge from the main product. You just have to cook it a little longer than usual. And it’s better not to even cook, but to simmer in the oven (imitating a Russian oven) or in a steam bath. This way you will retain the maximum benefit contained in the flour. The recipe is the same as for regular porridge. You can add a spoonful of ghee to the finished one for taste. It will turn out to be a very healthy dish!

— sift the flour into a bowl, add salt, olive oil and water. Knead soft elastic dough. Roll the finished dough into a ball, wrap it in cling film and leave to “rest” for 30 minutes.

- boil chicken eggs, cool under cold water, peel and finely chop

- chop the green onion feathers, add some salt and simmer lightly in a heated frying pan, adding a little olive oil

- mix both ingredients, not forgetting to taste with salt and black pepper

- the dough has “rested”, the filling is ready - we begin to form the pies. Roll out the dough as thin as possible and cut out circles with a bowl (the diameter of the bowl I used is 12 cm)

The dough turned out to be soft and elastic, it does not tear during shaping and does not burst when baking, so it is easy and convenient to make tarts or pies of any shape from it.
